During the last few weeks I have been trying to not eat any Gluten or lactose as I suspect I am intolerant. Yesterday I had kind of a sweat tooth and I did some google searched and finally landed on this Paleo Apple Cinnamon cake from http://dietpaleorecipes.com. I just have to say, Oh My God! It was delicious! I would almost go as far as saying it was better than normal Apple cake. I recommend everybody to try this one! I added two apples to the cake so it was even more moist, but that made it more like a pai than a cake because it felt kind of undone, even though it was. Either way will work fine:) When it is done it smells like a perfect mix of gingerbread christmas cakes and apple cake.. yuuuum!
For the paleo apple cinnamon cake you will need:
- 2 cups almond flour(available online and in most stores)
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1/4 cup arrowroot powder (available at amazon and prob some stores like whole foods)
- 1 tsp cinnamon
- 1/4 cup coconut oil, melted
- 1/2 cup raw honey
- 1 egg
- 1 medium apple, peeled, cored and diced(Or two, I used Fiji)
- 1 Tbs vanilla extract
- dash freshly grated nutmeg
Preheat oven to 350 degrees. Combine all dry ingredients (except nutmeg) in a bowl and stir well to incorporate.
In a separate bowl, combine coconut oil, honey, egg and vanilla extract (optional), and stir to combine.
Mix this into the dry ingredients and stir until just combined. Add the apples and stir one more time.
Pour batter into a pan greased with coconut oil. Sprinkle with freshly grated nutmeg.
For a cake or loaf pan, bake approximately 30 minutes. For cupcakes, bake approximately 14 minutes.
Serve by itself or with delicious vanilla ice cream:)
